1/2 cup shortening
1 cup granulated sugar
1 egg
1 cup persimmon pulp
1 cup raisins
1 cup nuts, chopped
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
Cream sugar and shortening. Slightly beat egg and add to creamed mixture. Add pulp. Mix dry ingredients with raisins and nuts; add to mixture. Drop by tablespoonsful onto cookie sheet and bake for 20 minutes at 350 degrees F or until lightly browned.
Makes 2 dozen cookies.
