2 pounds ground beef
1 medium size potato
2 eggs, lightly beaten
1/4 cup melted butter
1 teaspoon prepared horseradish
2 tablespoons instant minced onion
1/8 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon MSG
1 tablespoon seasoned salt
3 tablespoons catsup
1/4 cup milk or water
For a good meat loaf, have freshly-ground beef. Scrub uncooked potato and grate, peel and all (about 1 cup after grating). Mix all ingredients well, being careful not to over-mix. Shape into a loaf in a shallow baking pan. Spoon Zesty Tomato Sauce over loaf. Bake at 350 degrees F for 1 hour and 15 minutes.
Serves 6 to 8.
Zesty Tomato Sauce
2 teaspoons beef flavor base
1 cup hot water
1 (6 ounce) can tomato paste
1/2 cup chili sauce
2 teaspoons instant minced onion
1/4 teaspoon ground oregano
1/8 teaspoon ground marjoram
Dash of nutmeg
1/4 teaspoon black pepper
1 teaspoon granulated sugar
Dissolve beef flavor base in hot water. Add to remaining ingredients and mix well. This makes a thick sauce. If you prefer a thinner sauce, add 1/4 to 1/2 cup additional water.
