Tofu Breakfast Muffins
1 pound extra-firm tofu
1/2 cup orange juice
2 tablespoons honey
1/4 cup granulated sugar or fructose
1 teaspoon vanilla extract
1 ripe banana
Blend together in food processor or blender.
1 1/4 cups rolled oats
1/2 cup raisins
1 tablespoon baking powder
1 teaspoon baking soda
1 cup whole wheat flour
Mix together.
Mix wet ingredients with dry. Spoon into muffin cups and bake at 375 degrees F for 25 minutes.
