14 ounces diced tomatoes
2 cloves garlic, minced
1 1/2 teaspoons brown sugar
1 1/2 teaspoons kosher salt
1 teaspoon Greek or Mediterranean oregano
1/2 teaspoon crushed red chile
1 teaspoon Italian seasoning
1/2 cup red wine
1 tablespoon extra virgin olive oil
Puree the undrained tomatoes, garlic, brown sugar, salt and spices. Pour mixture along with wine
and oil into a saucepan and simmer for 10 minutes, stirring occasionally. Remove from heat and allow
to cool down before using. Makes 2 1/2 cups.
