15 ounce can black beans
1 large tomatoe diced
4 green onions sliced
1/2 stalk celery, chopped
1 medium carrot chopped
1 teaspoon ground cumin
1/2 teaspoon minced garlic
1/2 teaspoon minced jalapeno
1 lb tilapia fillets
1 lime
1/4 cup cilantro
In large saute pan medium heat add carrot and liquid from black beans and simmer until
carrots are begining to get soft. Add black beans, green onions, celery, tomatoe, cumin, garlic,
jalapeno and cilantro and continue to simmer, don't boil. Slice tilapia into 4 fillets.
In second saute pan sprayed with no stick spray bring temp up to high and then add tilapia.
cook for 3 minutes and flip and cook for another 2 minutes or until done... You may need to
reduce heat slightly to prevent from burning.. depends on your stovetop.
