1 cup nonfat ricotta cheese
2 tablespoons lemon juice
1-1/2 cups chopped cooked whitefish or
other medium-fat fish (about
1/2 pound)
1/2 cup chopped celery (about
1 medium stalk)
1/4 cup chopped green onions, (about
2 to
3 medium)
2 tablespoons plain nonfat yogurt
1/2 teaspoon salt
1/4 teaspoon pepper
6 whole wheat hamburger buns,
warmed
6 tomato slices
1-1/2 cups shredded lettuce (about
1/2 small head)
6 red onion slices, each 1/8 inch
thick
Spread the buns with a little cholesterol-free reduced-calorie mayonnaise or salad dressing if desired. The fish mixture can also be used to stuff a tomato or served on its own with whole-grain crackers.
Place cheese and lemon juice in blender. Cover and blend about 30 seconds or until smooth. Mix cheese mixture, fish, celery, green onions, yogurt, salt and pepper. Place 1/2 cup fish mixture on each bun bottom. Top with tomato, lettuce and red onion. Top with bun top. 6 servings
