1 stick unsalted butter

8 oz. cream cheese

1 cup canned pumpkin

1 teaspoon pumpkin spice

1 cup light brown sugar

2 jumbo or extra-large eggs

1 tablespoon baking powder

1/2 teaspoon baking soda

2 1/3 cups flour

TOPPING

1/4 cup + 1 tablespoon sugar

1/4 teaspoon cinnamon

1/4 teaspoon pumpkin spice

Preheat oven to 400 degrees. Line muffin tins with baking liners or coat muffin

pan with baking spray. In a blender on low speed cream together butter, cream

cheese, pumpkin spice and sugar until well blended. Add eggs, baking powder and

baking soda. On low speed add flour in two batches. Mix sugar and spices

together. Stir in 1 1/2 tablespoons of the spice sugar mixture. Put batter into

muffin tins. Sprinkle topping on top of muffins. Bake 20 minutes or until a

toothpick comes out of muffins clean
