2 tsp. black peppercorns, cracked

2 tsp. sage, chopped

1 tsp. thyme, chopped

meat from

1 turkey thigh

1 lb. kosher salt

Combine pepper and herbs; add thigh. Roll to coat. Place thigh in small non-corrosive pan; cover with salt. Press thigh by nesting second pan inside first pan and weighting down second pan. Refrigerate for 5 days. Remove thigh; brush off salt. Air dry for 25 days.
