Mushroom Salad

Tarragon Vinaigrette

ADDITIONAL INGREDIENTS

12 oz. mesclun greens

6 chicken liver pate mushrooms

4 oz. scallions, bias cut

TO SERVE

Toss greens with tarragon vinaigrette; place portion in center of plate. Place mushroom salad to right of salad; position pate mushroom and 1 scallion to left of salad.

NOTES

Season: Year round

Special Ingredients: Chicken liver pate mushrooms can be made by molding prepared pate into desired mushroom shapes.
