4 lbs boneless, skinless chicken breasts
1 1/2 sticks(3/4 cup) butter or margarine
2 cups breading mix(either a seasoned flour, seasoned breadcrumbs or chicken breading mix, your choice)
1 1/2 lbs of mushrooms(button, portabella,shitake, crimini all work well)
2 cans canned chicken broth
1 cup Marsala Wine
additional salt and pepper to taste
5 cups mixed grated and shredded cheeses(I use mozzarella, parmesean,
provolone, asiago, romano, fontinella, swiss, gruyere, and Monterey
Jack combos)
Take the chicken breasts and flatten them between two sheets of
waxed paper to approx 1/4 inch thickness, Cut into 2\
