3/4 oz. oil

1 oz. onion, pared, sliced

1 oz. leeks, chopped

3/4 oz. celery, chopped

3/4 oz. cabbage, chopped

3/4 oz. carrot, pared, chopped

3/4 oz. rutubaga, chopped

3/4 oz. mushrooms, chopped

1/2 tomato, peeled, seeded, chopped

1 garlic clove, pared, chopped

1-1/2 qt. white veal stock

1 sachet (fennel seed, cloves)

Heat oil in stock pot. Add vegetables and garlic; sweat for 3 minutes. Add stock and sachet; simmer for 40 minutes. Strain; reserve warm.
