1 CUP YIELD

lettuces, any variety--endive, chicory, field

greens and/or watercress

1 red pepper

fennel

SWEET BASIL VINAIGRETTE

1 bunch sweet basil leaves

3/4 cup olive oil

1 clove garlic, minced

salt and pepper, to taste

1/4 cup pear vinegar

Use five different greens--lettuces, endives, chicories, field greens, watercress, etc.- washed, dried and chilled until crisp. Toss in Sweet Basil Vinaigrette. Garnish with 1/2-inch cubes of raw red pepper and fennel.

SWEET BASIL VINAIGRETTE

Chop the basil leaves. Blend the basil with the olive oil, garlic, salt and pepper. Transfer to a bottle with a tight lid. Add the pear vinegar. Screw the lid on tightly and shake well to blend. Taste and correct seasoning. Shake well before each use.
