1 cup parsley -- minced

1/2 cup extra virgin olive oil

1/4 cup fresh oregano -- minced

3 tablespoon white wine vinegar

1 tablespoon garlic -- minced

1/4 teaspoon dried hot chile peppers -- crushed

salt to taste

In container, mix all ingredients. Use or chill up to 3 days. Add salt to taste. Makes 1 cup,

enough for 1 1/2 pounds of meat. Especially good with short ribs, skirt steak, filet mignon,

chicken, fish and baguettes.
