8 oz. ginger root

orange juice, as needed

oil, as needed

salt and pepper, to taste

Using mandoline or slicing machine, thinly slice ginger. Place in orange juice; soak for 1 hour. Heat oil to 375 degrees F; add ginger chips. Deep-fry until crisp. Remove chips; drain on paper toweling. Season.
