2 large eggs

1/2 cup oil

4 cups flour

1 2/3 cups sugar

1/2 tsp salt

2 Tbsp baking powder

1 large naval orange unpeeled and washed well

1 1/2 cups milk

I love to collect unusual baking recipes. The following is an example of such a

recipe. It is visually attractive and tastes wonderful. Please

follow all instructions to make this delicious ,intense orange

flavored and colored ,moist quick bread. It is a great breakfast or

tea bread. Although excellent plain, butter or orange marmalade goes

great as well as a cream cheese spread. It also make a superb French

toast using the traditional egg and milk batter to fry it! Cut up

orange and place in blender or food processor to chop fine.. Set

aside. Beat eggs until thick and lemon colored. Gradually beat in

oil. Sift all dry ingredients. Add to egg mixture with orange and beat

until well mixed . Batter will be on the thick side. Add and beat in

milk medium speed until well blended for about 2 minutes. Divide

batter into two greased and floured 8 x 4 inch loaf pans. Let stand

on counter 20 minutes. Then bake in a preheated 400F oven about 20 minutes or until slightly browned and appears risen. Lower heat to 300F and

carefully score bread lengthwise with tip of knife. Bake about 35

to 40 minutes or until toothpick in center comes out clean. Cool in

pans 10 minutes and carefully remove to cool completely. Wrap in

foil and leave until the next day. . Yield 2 small loaves which freeze well. Note: A nice orange glaze or icing would also be nice to

drizzle over the loaves. Use your judgment on how you wish to use

this versatile loaf.
