6 strips bacon
1 medium onion
1 (15.0 oz) can young peas, drained,
OR 2 cup fresh shelled peas
parsley flakes
In a cast-iron skillet, fry bacon till medium done (not crisp). Remove bacon from pan and set on paper towels to drain. Chop the
onion and saute in bacon pan, until soft. Spoon off excess
drippings. Chop bacon in small pieces and return to pan. Add drained
peas and parsley Flakes. Mix and heat, 8-10 minutes. Serves 4
