2 oz. onion, pared, chopped

2 garlic cloves, pared

ground cumin, to taste

ground coriander, to taste

salt, cayenne pepper, to taste

12 oz. potatoes, cut into strips

vegetable oil, as needed

6 oz. onions, pared, thinly sliced

Place onions and garlic in blender or food processor; puree until smooth. Season with cumin, coriander, salt and cayenne. Place a small amount of oil in skillet; fry paste until brown. Remove from heat; reserve. Heat enough oil for deep-frying to 175 degrees F. Add potatoes; deep-fry until tender. Increase temperature to 375 degrees F; deep-fry until golden. Remove from oil; drain on paper toweling. Toss with fried seasoning mixture; reserve warm. Pour oil into skillet to depth of 1/2 in. Heat until hot; add onions. Fry until onions are reddish brown. Drain on paper toweling.
