1/2 cup mayonnaise
2 tsp soy sauce
1.5 tbsp fresh lemon juice
1.5 tbsp sesame or olive oil
1.25 lbs boneless/skinless chicken breast
1/3 cup green onions, thinly sliced
1/2 cup walnuts, tasted lightly
Saute chicken breasts for 10 minutes in heavy skillet in 1 tablespoon of hot oil, turning once. Toast walnuts in . tablespoon
oil in another small skillet. In a bowl, whisk together mayonnaise, lemon juice, soy sauce and .5 tablespoon of oil. Chop
cooked chicken finely. Mix chicken, walnuts, green onion slices and dressing. Chill if desired. Serves 4.
