2 cups dill vinaigrette

1 seedless cucumber, sliced

1 daikon, peeled

1 red onion, pared, julienne

1 tbsp. pimento, minced

dill sprigs, to taste

salt and pepper, to taste

Combine all ingredients in bowl. Cover; refrigerate for 4 to 5 hours. Adjust seasoning.
