1/2 cup low-fat buttermilk

2 tablespoons chopped fresh or

2 teaspoons freeze-dried chives

2 tablespoons low-fat sour cream

2 tablespoons lemon juice

1 teaspoon caraway seed

1/2 teaspoon salt

1/4 teaspoon pepper

3 cups finely shredded green cabbage,

(about

1/2 large head)

1 cup shredded carrot (about

1 large)

1/2 cup finely chopped green onions,

(about

5 medium)

CREAMY JICAMA SLAW

1 cup shredded jicama

Mix buttermilk, chives, sour cream, lemon juice, caraway seed, salt and pepper in large glass or plastic bowl. Add cabbage, carrot and onions; toss. Cover and refrigerate about 2 hours or until chilled. 6 servings

VARIATION

CREAMY JICAMA SLAW

Omit caraway seed. Substitute shredded jicama for 1 cup of the shredded cabbage.
