2 tablespoons white wine vinegar
1 tablespoon vegetable oil
1 tablespoon reduced-sodium soy sauce
1 teaspoon grated gingerroot
1/2 teaspoon sesame oil
1/4 teaspoon salt
2 cups diagonally sliced daikon
radishes (about
3 medium)
1 cup sliced mushrooms (about
3 ounces)
1/4 cup sliced green onions, (about
2 to
3 medium)
6 Bibb lettuce leaves
1 tablespoon sesame seed, toasted
Daikon radishes are long and mild, and are also called Japanese or Oriental radishes. Daikon is often pickled or shredded and used as a garnish. Here it\'s sliced and combined with mushrooms and green onions in a tangy marinade.
Shake vinegar, vegetable oil, soy sauce, gingerroot, sesame oil and salt in tightly covered container. Pour over daikon, mushrooms and onions; toss until evenly coated. Cover and refrigerate about 2 hours or until chilled. Serve on lettuce leaves. Sprinkle with sesame seed. 6 servings
