7 oz. strawberry puree

lemon juice, to taste

lemon extract, to taste

sugar, to taste

kirsch, to taste

arrowroot, as needed

Combine first 5 ingredients. Thicken with arrowroot to create desired consistency. Transfer small portion of sauce to separate bowl; thicken again to form pipable sauce for outlines on plates.
