2 egg whites, unbeaten
1 1/2 cups granulated sugar
5 tablespoons cold water
1/8 teaspoon cream of tartar or 1 teaspoon light corn syrup
1 teaspoon vanilla extract
Put egg whites, sugar, water and cream of tartar (or corn syrup) in top of double boiler and mix thoroughly. Place over rapidly boiling water and beat constantly with rotary egg beater until mixture will hold a peak (about 7 minutes). Remove from heat. Add vanilla extract, and beat until cool and thick enough to spread.
Makes enough frosting for tops and sides of two 9-inch layers.
