4 tablespoons margarine or butter
1 cup finely chopped celery
1 cup finely chopped onion
1 large bell pepper, finely chopped (optional, not in picture)
4 cups cooked rice
2 packages chopped broccoli, cooked according to directions (or 32 oz of frozen broccoli)
2 1/2 cups of shredded cheese (the 1/2 cup is reserved for topping) or 1 (8 ounce) jar Cheez Whiz
2 cans undiluted cream of chicken,
    mushroom or celery soup
Garlic, salt and pepper, to taste

Sauté celery, onion and bell pepper in margarine. Add rice, broccoli, cheese, rice and soup. Mix well and season.

Grease a 4-quart casserole. Turn mixture into a casserole and bake at 350 degrees F for 45 minutes to 1 hour or until heated through.
