6 to 8 slices bacon
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 can stewed tomatoes
1 small can tomato sauce
1 cup rice
Salt and pepper, to taste
Fry bacon in a large cast iron skillet. Remove bacon strips and set aside.
In remaining bacon grease, saut?onion and pepper over medium heat. Cut stewed tomatoes into pieces and add to skillet with 1/2 can of water. Add remaining ingredients and bring to boil. Cover; reduce heat to low and simmer 15 minutes until done. Crumble bacon over top and serve.
