Here is my favorite one. I have tried so many I finally settled on this one. I also have a great one with jalape?s in it.

I make this in a cast iron skillet, but it can be made into muffins as well. Just fill muffin tin about 2/3 full and bake at 400 degrees F for 25 minutes.

2 cups all-purpose flour
3/4 cup granulated sugar
1 cup yellow cornmeal
1/2 teaspoon baking soda
1 teaspoon salt
1 cup butter
1 cup half-and-half
2 eggs, beaten
3 teaspoons baking powder

Combine the first 5 ingredients.

Scald butter and cream. Add this to dry ingredients.

Fold in egg.

Grease and flour cast iron skillet. Bake at 350 degrees F for 30 minutes.
